- 1 cup packed fresh basil leaves (1 bunch of basil)
- 1/4 cup pine nuts, toasted
- 1/8 teaspoon ground black pepper
- 2 Tablespoons freshly grated Parmesan cheese
- 1 1/4 pounds boneless, skinless chicken breast, cut into 3/4-inch cubes (aim for 24 pieces of chicken)
- 2 zucchini, cut into 1-inch pieces (aim for 24 pieces of zucchini)
- 24 cherry tomatoes
- Preheat an indoor or outdoor grill.
- While the skewers are soaking, blend the olive oil, garlic, basil, pine nuts, black pepper and parmesan cheese in a blender or food processor.
- Thread alternating pieces of chicken, zucchini and tomato onto the soaked skewers starting and ending with the chicken, using 3 pieces of chicken, 3 pieces of zucchini and 3 tomatoes.
- Brush the kabobs with the basil mixture, coating well.
- Grill the kabobs about 7 minutes, brushing with the basil mixture until it is all used. Turn the kabobs frequently until the chicken is cooked through and reaches 165 degrees F.

8 skinless, boneless chicken breast halves - cut into 1 inch cubes
In a large bowl, whisk together oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).
Preheat the grill for high heat.
Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers.
Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.

- "1/4 cup soy sauce
- 1 tablespoon ground allspice
- 1 tablespoon ground cinnamon
- 1 tablespoon ground nutmeg
- 1 lime, juiced
- Salt and freshly ground black pepper
- 2 pounds boneless skinless chicken breasts, cut into 1 1/2-inch pieces
- Mango Salsa, recipe follows
- 2 tablespoons brown sugar
- 1 tablespoon minced ginger
- 1/2 teaspoon hot sauce
- 2 green onions, diced
- 1 English cucumber, diced

- In a food processor, combine the orange juice, olive oil, soy sauce, thyme, allspice, cinnamon, nutmeg, garlic, green onions, ginger, lime juice, onions, peppers and some salt and pepper; puree until smooth. Add the chicken to the bag and marinate in the refrigerator for 1 to 2 hours. Heat the grill to medium-high. Skewer the chicken pieces and grill on one side for about 5 minutes. Flip and grill the other side until cooked through and grill marks appear. Top with the Mango Salsa and serve with the 1/4 cup reserved (unused) marinade as a dipping sauce.
- In a medium bowl, combine the lime juice, sugar, ginger and hot sauce. Mix thoroughly and add the green onions, cucumber and mango.

- Set pineapple aside.
- Pour over chicken.

Pam Grilling Spray
Cut chicken breasts into 2 inch pieces.
Combine the garlic powder, brown sugar, ground ginger, black pepper, oil, water and soy sauce in a medium size bowl. Toss chicken in mixture until coated. Place in the refrigerator for 3 to 4 hours to marinate.
Cut the pineapple into 2 inch pieces. Slice red onion so you have slices about 1 inch long and wide.
Place chicken, pineapple and onions on metal skewer or wood skewer, that has been soaked in water, alternating pieces.
Spray Pam Grilling Spray on grill according to directions. Place skewers on grill. Turn grill on to medium high heat and cook 10-15 minutes or until chicken is done, rotating several times.
